SUMMER MANGO AND CABBAGE SALAD
Sweet, tangy and crunchy summer salad that is a rule breaker in every way. This salad is a favourite at barbeques and dinner parties.
INGREDIENTS
4 cups purple cabbage coarsely shreddedOne mango cubed
One kiwi fruit sliced
1/2 purple onion sliced thinly
1/4 cup muesli of your choice
SALAD DRESSING
1/3 cup oil1/3 cup vinegar
1/4 cup water
1 Tablespoon mustard
3 Tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Method
Layer the salad vegetables, with the shredded cabbage as the salad base, followed by the fruit. Top the salad with the thinly sliced onions and muesli of your choice.
Blend together the dressing ingredients and pour over the salad right before serving.
