GREEN BEAN AND DILL SALAD
The perfect salad to bring on the season of entertaining. This simple yet sensational salad is delicious enough to be a crowd favourite yet easy enough as a weeknight dinner side. Enjoy this salad hot, cold or at room temperature.
INGREDIENTS:
- 500 g green beans
- 2 Tablespoons dijon mustard
- 2 Tablespoons vinegar
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ¼ cup olive oil
- ½ cup fresh dill chopped
METHOD:
- Trim the ends of the green beans.
- Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt to the water. Add the green beans to the boiling water and cook for two minutes.
- Remove from the pot from the heat and place the green beans in a prepared bowl of cold water to maintain the beans vibrant colour and crunchy texture.
- In a small bowl whisk together the mustard, vinegar, black pepper, salt, olive oil and dill.
- Toss the cooked green beans with the dressing to combine and enjoy!
